I love the way you are passionate about lard. I grew up in Mexico enjoying it's fantastic flavor. I was expecting to find something similar to Mexican lard. Your lard is excellent just by its clean and environmental qualities. But, the flavor is very clean for I have known. A little more porkyness would be amazing.
