This is a really nice, strong matcha. I find it beautifully sweet and grassy with a little bitterness. I love using this matcha for latte with some fun flavors because the strength and bitterness stand up really well without being overpowered. My favorite combinations with this matcha powder have been a salted coconut matcha latte, a maple matcha latte, a mango coconut matcha latte (pictured), a sparkling yuzu matcha, and a raspberry matcha latte. This Gyokuro by the master Sakamoto-san is something outstanding. It has the best sweetness a Saemidori cultivar can achieve by its nature in 100%, excellent work, you can just tell it my the leaves colour with its high chlorophyll content. I started with Chinese green teas, which are steeped with 80° C water, but apparently Japanese teas (or at least this shincha specifically) are made with 60° water. This was a beautiful tea from the outset. The powder itself has a chocolatey musky scent; dark lime in color, bitter to the tongue, thats turns almost nutty or like wheat grain in flavor.
