Great sweet potato pancakes! I actually prefer the buckwheat because they are not as sweet, but the sweet potato pancakes are great for occasional treat and flavor. I added the optional egg for more protein.

I shared these pancakes with my family. They tasted like freedom! Just kidding, but they did have a very nice flavor. I especially liked the texture, they're nice and fluffy. Just a tip, after you mix it together, let it sit just for a minute and let it rise. Yummy!

Love them! There was a lot of rising action after the batter is mixed, so give yourself enough room for your batter to expand. They are absolutely delicious! I use evaporated milk in my pancakes. They were absolutely delicious! I used the recipe on the back of the box, cutting it in half to make about 7 pancakes and using blueberries picked fresh out of the orchard and frozen a few weeks ago. Wow! The Blueberry Pancake mix from Cousin-T is just excellent, and I will definitely be using this great new brand from now forward.

Ever since poor Aunt Jemima got banned, we bout Cousin T buttermilk pancakes..they now are our household staple! Won’t buy any other brands any more. They are so worth it. I fixed Cousin T's pancakes for the first time today. I went with the Gourmet version, as opposed to the quick version since I wanted my first taste of these pancakes to be the best it could be. Y'all - these are some GOOD pancakes. They are so, so good. I made a few mistakes making them though. I neglected to mix the dry ingredients first and then put in the wet ingredients next. I think it does better that way. I also should have used a whisk like the package instructions (clearly) say....
