Stormageddon loved the quick pancake recipe. He thought they were "amazing." Me, they reminded me back when I was Stormageddon's age and the super thin pancakes we use to get at a nearby Mom 'n Pop restaurant. I would love to actually see this in the grocery store.

Couldn’t wait. Had to take a bite before I snapped a picture. Cousin T’s pancake mix is top notch. I must confess. I ran out and grabbed some “Hungry Jack” mix a few weeks ago. My husband noticed IMMEDIATELY. He said, “Is this Cousin T’s?” When I said no, he said, “I knew it. They taste funny.” I immediately ordered 6 boxes. I won’t run out again!

Made our first batch of the Apple Cinnamon pancakes. The apple topping is delicious even though I got distracted and forgot the cinnamon, next time! I made the pancakes using buttermilk. I will use half the sugar next batch as they are plenty sweet. I like the rye flower you use in the mix.

So far, I’ve only made the blueberry mix. They turned out delicious! The pancakes are very easy to make, very fluffy, and have excellent taste.
