Love this knife. Mine has a little wobble in the back spine but it doesn’t effect its ability to be the go to knife for most applications. Very sharp and it’s shape makes it really versatile.

I love the weight but just wish the top would be sharp and it wasn't as sharp as i like but overall i love the hell out of it use it for everything i can!!! I keep it oiled with cooking oil and almost have it to a keen sharpness!!! Plan on getting more more !!!

This knife is very sharp! The shape takes some getting used to because you’re cutting from higher up, but the weight is great. Also really great for cutting then scooping food up because the blade is so large. Only issue I’ve noticed is you need to keep the blade pretty dry because It can rust easily, and keep it lightly oiled after use. This picture is after about 2 weeks of use. Will get another type of knife from them eventually.

Honestly when I first held the Promaja I felt it was too forward or blade heavy. But after a few minutes of putting it to work it became very comfortable. And not long became a beast of a chopper. Made short work of my prep. Really starting to love this blade. Cheers!

Even if I didn't have the Lixy I could make it through a whole hog and all the garden with this. Easily parts out whole chickens and separates St. Louis ribs from the riblets.

Flesh and bone know you mean business when you bring this to the table. The weight and comfort of the handle are amazing! I had no idea how serious this cleaver was when I bought my first four knives. It's almost too much for not butchering a whole large animal, but you'll be glad you chose it for just a chicken...

You want tomato slices so thin that you need 5 just to taste them? Look no further. This thing will slice fruits and veggies so thin you'd think grocery prices are up... Oh wait. Never mind, you can, regardless. If I cared to be sober, I could keep the meat slicer put away for lunch meats. I'm not joking here.

I know you've probably heard about spatchcock chicken, but using this knife I also removed the rib cage as well as the spine so 80-90% of the chicken was bone free. Talk about easy portions for the kids and those that like bone free white meat at a cookout.

I love these knives. They came wickedly sharp, nicely packaged and barbarically beautiful! Lixy was a surprise. You can read that it weighs 2.77 lbs...but when you actually get this monster in your hand it is something else. Seriously feels indestructible. I have a solid and hefty cutting board, but I feel this thing could tear it apart. The others in this five blade collection will probably get more use as they are sharp and more practical for most kitchen tasks. Only con or perhaps quest...

Thank you for a great knife! I use it every day. I made a magnetic holder for it so-it’s always at the ready! The Altomino is very sharp right out of the box. The steel did “stain”, dis color. Sort of adds a nice patina! I would recommend your knives to friends!

I have been working as a professional cook for over 20 years. For xmas this year I bought my brother the Miyabe. I took it for a test drive before giving it to him. This knife is very well balanced with a heft that you can feel throughout the whole thing. It sits comfortably in the hand and is the right size for precise work or a workhorse, while not being intimidating to novice cooks. It’s sharp as heck and impressive to look at. This model of chef's knife has surprisingly seen little use so far HOWEVER I have only had the set for a few days and as I learn how well these knives perform individually, I am enjoying their individual broad scope of use. Cut like described when he opened it we cut a piece of wrapping paper. He uses it when cooking quite often. Came way quicker then estimated. Would recommend!!
