I used both of these bad boys today for the first time. I started out with Altomino and trimmed up a whole beef tenderloin, and it worked magic removing the silverskin, which is always the hardest part for me. Not today. Then I grabbed the Machado and cut out the most beautiful center cut filets with perfect ease.
