I have not used it yet because I just received it a week ago. I love the hammered design and the size for a large dish that I can cook and have some put away. I needed a pan that I know would not break down and leach out PFAS and other chemicals. This pan I know will fill in all the boxes that I want from a pan that lasts. It truly is a beautiful pan. Cooking was easy and understanding the different cooking temperatures came intuitively. I have always used a Staub cast iron that was quite heavy but epic cookware. I do have one concern that after cooking a veggie stew the pans surface was discolored, as shown in my photo. I'm waiting on their service department to make suggestions and will hope they'll suggest a good solution.
