Just a comment :I discovered that each time you change a stone or move the knife to the other side to sharpen you must check your angle. variations in stone thickness has an effect on the angle. I'm not shure why the angle changes when you switch to the other side of the knife. I have the Hapstone magnetic angle measuring tool and it certainly helps
