What do you bring a fine dining chef for their table at Christmas. For our Christmas Day menu I emailed Saicho a request for best pairings beforehand. I got a swift reply with what I needed. The day was all the more special with Saicho at every course and really memorable seeing everyone’s reaction to be served sparkling tea instead of alcohol. One even ordered, it was that good.
