The brisket came almost fully pre-trimmed. Makes for an easy entry into the Smoker with very little mess. Put on at 3pm at 200. Wrapped at 167 after 13 hours. 225 until it was probe tender at 1pm. As you can see from the video - pretty jiggly! My first try at a brisket and had nothing left over.

I bought a large prime grade brisket from 44steaks.com. Marbling was great, I trimmed it down to normal Texas standards. Seasoned it with my preference of 1 part coarse Kosher salt, 1.75 parts ground black pepper, and .25 parts garlic powder. I smoked for 4 hours on a pellet grill then bumped the temperature to 265. So we smoked this for 14 to 15 hours, got a nice smoke ring and was very tender. I only had to trim it a little bit. It was pre-trimmed but I still took some off and rounded it off. Had a nice smoke ring to it. It took a total time of 17 hours to finally finish.
