Handy laser! I bought the 180mm Bunka after using the Boss Bunka from Shibata. Makes cutting shallots and onions much more fun. Excellent fit and finish and very easy to maintain. Edge retention has been very good so far with my daily use.

Absolutely LOVE these!! Have had my eye on them (posted to my Pinterest wish list) for over four years now. After asking for them for Christmas for all four years and never getting them, I finally broke down and bought them for myself. So glad I did!! The Sakai Takayuki 45 Layer Damascus is a beautiful santoku and came razor sharp out of the box! The fit and finish is superb with no complaints. I would not hesitate to recommend this knife to anyone in the market for a Japanese style santoku. The wa style handle is very comfortable and the knife is well balanced in the handle and lends itself to a pinch grip especially if you have medium to large sized hands. I would definitely buy it again!

Love this knife! Literally one of the best purchases I've made! it's light weight and really sharp and, glides through cutting foods easily. This is the second time I have bought this same knife and I am delighted with it. It is very light and the edge it has is surprising, very easy to sharpen and lasts a long time. It is certainly not a knife for beginners as it needs a lot of care and maintenance due to the rustable steel. I would buy it a third time without thinking, it is an excellent value for money.

Definitely my new favorite knife! Super sharp right out of the box. It’s a bit longer than 180mm (closer to 190mm) and it’s has a nice weight to it that helps the blade slide through vegetables like they’re made of butter. Also, it looks great in person.

I wanted a large stainless steel cleaver for everyday use, and this foots the bill. The spine is a little thicker than a CCK, and the blade is massive. It's a beast of a knife, but not too hard to use due to the relative thinness of the spine. It comes pretty sharp and crisp out of the box, but it can probably get a laser edge with a touch up. Also, this is a great knife to use as a scooper during prep, due to the size ... it's almost the size of a plate!

It's a laser! Out of box, it's slicing through anything I can throw at it like it was butter. I also use it to trim fat from briskets, and it slices through the blubbery fat like nothing. I highly recommend knives from Makoto Kurosaki!

It's been a good minute, I feel bad about not leaving a review, but this knife it's the bees knees for what I do and it holds true to the edge. I appreciate the sence of urgency too when I got help replacing this knife, as for the others I've ordered they're great! This knife is simply amazing. Incredibly light and thin, yet keeps and holds the most insane edge out of all my knives due to Takeda's excellent heat treatment. There is a hint of flex to the blade, so it isn't a workhorse, but with some technique it simply flies through ingredients, and the zero grind ensures that the cut pieces hardly ever stick or slow you down with friction.
