Out of the box the knife was reallly sharp and cut cleanly and easily....or is it just my brisket is so tender????

Have not used it just yet, but well constructed and easy to put together. Would suggest that you have 2 pins to hold base plates in place after putting it together, which will help when moving it to an idea location. Pins should have a fine cable secured to the base plates.
