I’ve been a fan of the Tosaichi lineups and bought them a few times for myself and as gifts to friends. They’re good carbon steel knives to invest in for beginners because it’s a simple finish and it’s stainless cladding. Not to mention they’re affordable too!

This knife is sooooo sharp and it looks awesome!! I have wanted this Moritaka Gyuto for a very long time. I’m glad I got the 240mm!! You can’t go wrong at all. Not accordion does with this knife. It rock Cho’s good but it really shines with a push/pull cut!! Learning new ways to prep is fun!

Very happy with this knife so far, still early days. So slicy. Very sharp as delivered, I haven’t needed to touch it up. The edge steel has blued up nicely as well. I’m not exactly sure how a stainless steel kurouchi finish will hold up with time and what it looks like with wear and tear. Maybe I will update if possible. But it is nice knowing it can handle a bit more than all carbon in general. So far, this knife is a great all purpose chef knife in my small home kitchen.

Was eyeing a Yoshikane SKD. I already had laser and middle weight knives so I chose Takahiro Nihei's Shinkiro. First time handling it, it just felt... right. The 216 mm blade size is perfect. Don't let 'workhorse' fool you. It was very, very sharp out of the box. Falls through ingredients. A real treat. I wish I took better pictures. The blue and red patina makes the Damascus pop.

This is my first time buying these knife stands. I was skeptical by it at first because it seemed too simple, but it exceeded my expectations. The best part is there are no screws to set this up or gluing involved. And the leather is so smooth and gentle on the knives as well. Highly recommend!

Shaves hair with no pressure, takes a really sharp edge beautiful design. Knife came with the tip slightly bent to the side but was an easy fix with a high grit whetstone. Would buy again just to keep a spare for display because, man is it beautiful!

Love these knives. Excellent set with little redundancy. High quality! Sharp as heck. Fit and finish is impeccable. I will say the Nakiri handle was a bit dry. I contacted Ryusen and they said the walnut is sealed and does not need treating, but the handles looked much better with a bit of wax/mineral oil (I use the same stuff from Larchwood that I use on my cutting board). Note the magnetic knife block in the video is not the wall mounted one included in this package and the Miyabi knife...

Very enjoyable knife for heavy work, carving big veggies with this is a pleasure! It’s very satisfying also just to look at it with the oak handle and the beautiful work on the blade. Sharpening wise, I would not recommend this to beginners since 24cm is quite the size but if you know a little about sharpening it’s not the hardest one to get back in shape .

Fantastic knife. Home cook here. Overall knife came super sharp, is really comfortable in the hand and has a good weight that makes it feel robust but still well balanced. Needs just a little bit of rounding on the spine and choil to make it that next level of comfortable but is by no means uncomfortable without it. Highly recommend it if you’re looking to get into Japanese chef knives.

The best way to describe this knife is calling it “the love child of a Nakiri and a Chinese Cleaver.” It’s tall, it’s heavy and has a forward weighted blade. The 140 grit Atoma Diamond Plate is a nice addition to my sharpening quiver. My stones were showing definite dishing and a few dressing strokes with the diamond plate left them truly flat. My first real experience with a deba. I am not much for processing fish but I prefer a deba over a honesuki for chicken butchery. The thicker spine just seems safer around bones and joints , worth a try for yourself. As for the knife, it is made by Toru Takamura and sharpened by Tateo Myojin. These are heavy hitters in the Japanese knife world, Tateo who is a master sharpener of single bevel knives and the father/trainer of Naohito from Tetsujin.

I bought this knife as my "workhorse" for all those slightly more complex tasks, and I do not regret it. It is still a great slicing knife capable of precision work and great for cooked protein like meat and fish. Sharp recommended it, and to fit my Ryusen Hamono Blazen Knives, they customized the handle of the knife for me. So don't get confused by its look; it is customized. Great Service and great work. These guys know what they are doing and talking about!
