Love the De Buyer Mineral B Pro pans! I seasoned first in the oven since the handles are oven safe, and on an electric stove top it's difficult to season the sides of the pans. The handles are a comfortable shape to hold and the pans work amazingly well. I get a nice sear on things and I have no issues with sticking. Cutting vegetables is now a magical experience everytime. Feels like cutting air and this particular metal doesn't rust. I can be interrupted 20m exceptionally and no orange spots when I come back. Finish is gorgeous to look at everyday. Also, the team has been incredible. Reached out by email and they answered within an hour, very cooperative!

I love this knife.. it’s my 4th Japanese knife and my first Shiro Kamo. The fit and finish is beautiful. I love the handle and the stainless cladding on this is a joy.. It came out of the box super sharp but I’m looking forward to sharpening it myself. My others are all Aogami 2 so I’m interested to see the difference between them and AS on the stone. Came very sharp out of the box, fit and finish is excellent. The edge geometry is very, very good, nice and thin at the tip, dicing onions has never felt this good. Despite its length, it’s very good for more delicate work since it’s a k-tip knife. It’s also very beautiful. For the price, I highly recommend it.

The 195mm denka nakiri has been on my wishlist for a while, so I jumped on it when I saw it for sale. These knives are infamous for their less than stellar fit and finish, but I’m happy to report that the one I received from Sharp Knife Shop was excellent! I believe SKS does some quality control on the knives they sell, so that is appreciated. I can safely say that this knife is one of the best performers I have and will see lots of use.

This this is a laser. So much nicer in person as well. I’ve had a blast cutting with it. I will say that there is a bit of a learning curve as the top tip isn’t sharpened, so at first I was using it when slicing through onion etc. and had trouble, but once I used it properly, the knife became a blast to use.

Wonderful experience! This is the best vegetable knife I own. The blade seems to just fall through veggies. I can slice thinner and faster than ever! And the texture on the sides of the blade actually help food fall off the knife, unlike the large dimples on western Santoku knives. The VG-10 stainless was the right choice for me and my family for blade care/maintenance.

Whenever i go to buy a yoshikane, they get bigger & bigger, i can never pull the trigger on the smaller knives when for a few more $ I get a more steel, but this honesuki it has a great angle giving you that knuckle clearance that you dont get from pettys though. one day ill get some smaller yoshis.. The finish is subtle but sleek, and looks humble from afar but stunning up close. It has a stable-feeling, blade heavy balance, and obviously a nice flat edge. Ive only used it a handful times but I’ve found this ideal for mincing herbs, tip work, and slicing. It’s a laser and really sharp as anything, but it stands out to my eye as being wonderfully simple and elegant. My picture doesn’t capture the detail but it really looks so great in the hand.

This is my third Japanese knife from Sharp Knife and another excellent purchase. I had been waiting for this specific gyuto to become available, and it was well worth the wait. This Kato is very impressive. the shinogi line & tsuchime catch the light in very interesting ways - making the blade even more beautiful in person. The spine is very nicely rounded and maintains its' thickness towards the tip - which makes the knife feel more robust than one might think. Cutting performance is flawless of course, as the thickness behind the edge makes this a great option for someone who prefers a laserbeam.

This is a really nice set of standard sharpening stones. I just finished using them to thin and sharpen an aogami super petty knife from Yoshimitsu Hamono that I received a month ago. That knife didn't need sharpening, it was sharp before, now it's sharper than a mutherf*cker.
