I cannot tell you how delighted I was with this product. I have mastered my first sour dough loaf - Cranberry and Walnut. I'd love to post a picture but we scoffed the lot. The rye starter was easy to get going and is living happily in my fridge, until its next use. The information provided with the starter was very helpful in explaining the process of making sour dough bread.

Best bread knife ever! Glides through super crusty sourdough and soft rolls equally well. Wish I'd bought it when I first started making sourdough, the Mercer bread knife is longer and sharper than your average knife making it easy to cut through the middle of large loaves.

The product definitely improve long fermentation by about 25%. Bread texture & flavour is really improved. Dough is easier to handle. I only need to fine tune the baking temperature & time as the centre of my loaves is slightly under baked & is sticky when sliced. Very pleased with the product. Graham Herriott.

So happy with the NZ Country sourdough starter that I purchased from NZ Malt. The instructions were super easy to follow and after a few days I got a wonderful active starter to bake with. The flavour and rise of the sourdough loaf that I baked were great. I also used your NZ malt diastatic power which gave the bread added flavour and a good crust. Looking forward to trying some of the other starters.

I’ve tried the dough without a Banneton. Proofing in the Banneton give the dough more structure and shape and gives a more professional look to your loaf. As long as you use rice flour the dough never sticks. They also look nice. 🙂

Waited a while building up strength.. First loaf made old style. (This is how I baked in my bakery in Spain in the 90's.) 3/4 cup active starter 5 cups flour and enough water to make a fairly thick batter. Overnight proof then added tsp of salt mixed it in by squeezing. Left it to rest 1/2 hour then 4 rounds of fold and stretch, Shaped and loaded into my sandwich pan. Left to rise in the fridge overnight. Brought back to room temperature in the morning baked at 200 degrees (in the picture loaf ...

I love my dough whisk it is my new friend in the kitchen use it everyday from making scones to stirring sauces and gravy. So decided to buy 5 and share with my friends for Christmas.
