Strangest knife I have ever seen although when it came took it out of the package and cut with it oh my God it cuts like a dream. I think I was cutting leftover steak and it just cut it so thin so thin it’s great night specially part of my knife holder my oak or whatever it is knife holder

Thank you for a great knife! I use it every day. I made a magnetic holder for it so-it’s always at the ready! The Altomino is very sharp right out of the box. The steel did “stain”, dis color. Sort of adds a nice patina! I would recommend your knives to friends!

I have been working as a professional cook for over 20 years. For xmas this year I bought my brother the Miyabe. I took it for a test drive before giving it to him. This knife is very well balanced with a heft that you can feel throughout the whole thing. It sits comfortably in the hand and is the right size for precise work or a workhorse, while not being intimidating to novice cooks. It’s sharp as heck and impressive to look at. I will buy a knife from this maker for myself.

I bought this for my husband for Christmas and he LOVES it. He’s a hard man to buy for but I know he loves his steak. As soon as it came in the mail we were cooking steak the next day to test it out. Bought this knife for my dad for Christmas. He saw it on a Facebook ad and told me about it. Picture is a screenshot because I requested a photo from my dad. Came in a box and bag for knife. Cut like described when he opened it we cut a piece of wrapping paper. He uses it when cooking quite often. Came way quicker then estimated. Would recommend!!

This model of chef's knife has surprisingly seen little use so far HOWEVER I have only had the set for a few days and as I learn how well these knives perform individually, I am enjoying their individual broad scope of use. When I first got the gator day truth, that is a Cayman already cut me why just try and take out the package beautiful design on both of them got the gator and the eagle. The eagle is so beautiful. I’m going to use it on my steaks and the gator is gonna be used for pork chops for tonight. I love it. Have a handles feels good and comfortable.

Being a journeyman meat cutter. In the past 20 years I have bought lots of knives. Some way over priced, and pieces of crap. Your knives are the most comfortable I have ever had. When I first got them, the edge was not what I expected. A few strokes on a barbers strop. WOW you now can shave with them. They do hold an edge very well. I definitely need more. I do have a question. In the future do you have plans for steak knives?

I used both of these bad boys today for the first time. I started out with Altomino and trimmed up a whole beef tenderloin, and it worked magic removing the silverskin, which is always the hardest part for me. Not today. The Tusk and The Swordfish; These knives both appear to be discontinued. Although both are fantastic blades. The Tusk has a very lightweight blade, extremely sharp and a finger hole to keep everything where it’s supposed to be. From the first time I used it I knew the knife was a solid tool to use in my restaurant. Sharp is an understatement! The edge holds up very nicely throughout a variety of produce being prepped. I have cut both onions and tomatoes so thin I could see light through the slice! And after 2 weekends of prep, the blade still has a great edge.

So I am relatively new to the cooking game and this knife caught my eye. Here are the things I found about the knife: 1 - It just looks cool. Don't discount this factor. It's big. 2 - Unbelievably sharp. 3 - Well balanced. While on the larger size, it was surprisingly wieldable. 4 - Good construction. 5 - The large blade acts as a really useful "scoop" for chopped stuff. 6 - Leather sheath is nice, but not crucial as it comes with a cloth one. I would absolutely recommend. Don't think about it....

The knife feels great. It’s heavy and nicely contoured, but rugged and sturdy. It feels like something out of a medieval movie. Slicing vegetables is easy and enjoyable. Even over-ripe tomatoes are no match for this thing.
