I love Mizaki knives and this petty is fantastic. The blade geometry is really nice. The tip is nice and thin and then it gets a little thicker towards the heel but not too much. It was superbly sharp out of the box and the spine and choil are nicely polished. The fit and finish is beautiful. If you are looking for a handmade knife it doesn’t get much better than this.

Beautiful knives, my favorite steak knives. I oiled the handles right away and it really brings out the beauty of the olive wood that I purchased. Not sure what others will expect out of the box but they are functional sharp, not “ultra sharp” - but this is what I expected and wanted. For the price I don’t think I could get better, but honestly I don’t know that I’d want anything else regardless of price.

We've had a larger larchwood cutting board for years but it is so large and heavy that it's tricky to wash. I picked up the large one-hander and it's a great size for most tasks but it's also small and light enough to make cleaning easy. The first board arrived damaged but sharp knife shop was very quick to send a replacement. We love it!

This is a sweet little knife. The extra 10mm over a traditional 150 gives it extra utility, leading me to grab for it more often. The nashiji finish is beautiful and fairly low friction compared to the Shiro Kamo kurouchi petty it replaced. Minimal shoulders reduce the wedging so often seen in petty knives. 180mm should be the standard… I have many knives including 2 Nakiris that were 165. One was thin and light weight. Ans one was heavier with a thick spine that tapered down and is thin behind the edge. The thin 165mm was too light and didn’t have enough weight to effortlessly cut. The heavier one is fantastic but can wedge on taller denser ingredients. Moritaka found the solution… a thinner blade that is 180mm and some thickness at the choil. This makes for a great weight (185 grams measured)…...

We have a very small kitchen with just a small spot between a window and corner for a knife block. This was the only one I found that fit. Looks great and holds the knives no problem. Can definitely tell where the magnets are located, then them "snapping into position" but otherwise no complaints. Might need to buy a second as I get more knives.

Love this knife. It is very sharp out of the box and has maintained its sharpness very well after a week of usage. The damascus pattern is so attractive that I started looking into getting a 240mm. The blade is just slightly taller than a typical Gyuto which personally I really like and will be easier for anyone to get use to coming from a western chef knife.

Excellent knife for the price. The Ginsan steel gives the cutting edge a feel similar to old-school carbon steels, with smooth and confident cutting performance. Having some other very nice knives, this is just next level in both performance and looks. I wanted a do it all blade, and this comes so close. Very minor issue for me is the taper of the handle getting thinner by the heel, not ideal for slicing larger or dense items.

Love the wood and leather. Had a hard time finding a knife stand I wanted, this is great. Real wood, real leather, and the knives stick to the magnets perfectly, hold tight on there but allow easy release when removing. The one warning I would have for others interested: there WILL be one side with knife tips exposed, so make sure you have a place that this will be ok.

The Christmas gift was this Ryusen Hamono Fukaku-ryu knife set from the Sharp Knife Store, and I have been waiting for years to own a knife set like this finally. I'm really looking forward to putting them to use in 2026. They fit and accent the kitchen beautifully, and I love that they use Canadian wood on the handles to clinch it! *my camera is broken* however this kiritsuke knife is the one I purchased, and the website photo is exactly how it came! PRISTINE! Came super sharp right out of the box, and was packaged with care. Didn’t experience any discolouration after first use (with diligent care during use). Only one tiny flaw, it had a tiny Buble or bump on the coated handle, but I don’t notice it during use so it doesn’t bother me.

Heavier than most Nakiri knives that I have used due to thicker blade. This does not stop it from being a workhorse of a knife. Well balanced, nice hammer tones super sharp. Sliced up a whole bag of potatoes with this in minutes. Blade end is not the most attractive but it makes the knife more balanced. Handle is comfortable and a nice looking piece of wood. Very nice all around.
